I would be remiss in not thanking my family for their willingness to be “taste testers” and to offer their constructive criticism on recipes I tested on them, especially for my confidant and wife Nancy who had to endure several flops (which by the way didn’t make the final cut for this book) and for her suggestions, recommendations and reassurances along the way. Also, special thanks to my family who have passed down some of these recipes and to my son Paul and his beautiful and endearing wife Julie who offered technical assistance and encouragement for putting this collection of JoJo’s ‘Lite and Easy Recipes’ together.
