The world is full of diet plans. Most all of them work whether it's Keto Based, Low Carb, or one of the many Food Subscription plans. I have tried number approaches, and lost hundreds of pounds over the years. The problem is I have always managed to put the hundreds of pounds plus back on. For me and numerous others, taking the weight off is the easy part. Maintaining that weight loss is the challenge. I am not a nutritionist, dietician, or weight loss professional. However, I am a very good cook. Mostly because I like to eat, which is a double edged sword. The challenge is cooking my favorite recipes in lower calorie and nutritionally sensible way.

I am originally from the Chicago area, and learned to cook at the age of 5 or six. First it was breakfast in bed for my parents -- easy things like pancakes, bacon and eggs, and fried potatoes. I evolved into omelets, quiche, French toast, potato pancakes, and eggs benedicts. My parents loved the food, but my mother (I know now) dreaded the future kitchen clean-up in store for her. It was when taking a "Boys Food" class in 7th grade that really solidified my love for cooking. My mom was not a great cook, but competent with the traditional family meals like pot roast, spaghetti, meat loaf, and goulash. I also became a master griller--steaks, burgers, chicken. I picked up used cook books along the way at garage sales, swap meets good will etc... If only the internet was available in the 60's and 70's! Needless today, I am now very creative, and can look into almost anyone's refrigerator and pantry and figure out something to make for a delicious meal!
