Authentic Italian cuisine begins and ends with the quality of your ingredients, and the goal of each dish is to allow each element to shine on its own. Over-sauced pasta or over-dressed salad are common errors. The French just slather gravy on everything, but Italians want to make art out of everything they cook, be it a simple frittate or a painstaking bolognese. Once you have the foundational rules mastered, you can make any Italian dish you please, from whichever province of Italy. Onward.
