About the Book

Why is this a cook's manual and not a recipe book? Because there are rules in Italian cooking that, if violated, ruin the authenticity of the dish. And we are not the French. Authentic Italian cuisine begins and ends with the quality of your ingredients, and the goal of each dish is to allow each element to shine on its own. Over-sauced pasta or over-dressed salad are common errors. The French just slather gravy on everything, but Italians want to make art out of everything they cook, be it a simple frittate or a painstaking bolognese. Once you have the foundational rules mastered, you can make any Italian dish you please, from whichever province of Italy. Onward.
