I was raised eating southern Louisiana creole foods. I learned how to cook creole dishes at a young age. When I married my husband, who is from Trinidad and Tobago W.I., I had to learn how to cook his favorite dishes also. I began experimenting with the different seasonings and spices and infused some with my own style of cooking. After opening a restaurant and getting rave reviews for the cuisine, I was always asked, How do you make this? So I decided to write a cookbook.
